We suggest you prepare a Vegetarian hodgepodge. What is, in general, a hodgepodge, or, as this dish was called earlier, a peasant. This is a thick spicy soup, something between the first and second courses.
- It is definitely less fat!
- It does not contain tamasic products!
- And nevertheless, it will delight us with a familiar taste!
So, let’s get down to cooking a prefabricated vegetarian hodgepodge.

We will need the following products to prepare the Vegetarian hodgepodge:
- 200 g of smoked Adyghe cheese;
- 3-4 potatoes;
- 1-2 carrots;
- 2 stalks of celery;
- 200-300 g of cauliflower;
- 1 large tomato;
- pickled or pickled cucumbers;
- 2 p water;
- 2 tbsp l ghee;
- 0.5 tsp mustard seeds;
- 0.5 tsp ground fenugreek;
- 1 tsp smoked paprika;
- 1 tsp sea salt;
- greens, lemon, olives.
We begin to prepare the Vegetarian hodgepodge. We cut all the products into cubes, add water. By the way, this may be a vegetable broth, just the day before I cooked potatoes for filling dumplings, so I took it for soup. First, we throw chopped potatoes into hot water to boil, after a few minutes, cauliflower.
Heat the ghee in a frying pan, throw mustard seeds into the heated oil. As it begins to shoot, add the carrots, fry for a couple of minutes, then put the chopped cucumbers there – another two minutes, then celery and tomato, let’s simmer a little. Finally, fry it all with fenugreek and paprika.
We send the contents of the pan to the pan, where our potatoes and cabbage are almost ready. Stir and add olives, cheese, herbs, salt. Two more minutes on the fire, and leave to infuse for at least half an hour. Our Vegetarian hodgepodge is ready. This is just one of her options. You can of course experiment with this.
You can take beans instead of potatoes, you can add mushrooms or sauerkraut, and if you like, then vegetarian sausages, that’s why it is a hodgepodge.
