Gluten Free Cauliflower Buns – Gluten Free Recipes | Gluten Free Dessert Recipes Without Flour

Structure or Matter for Cauliflower Buns:

  • Cauliflower (any parts of a cauliflower fork can be used) – 150 g
  • Pumpkin or sunflower seeds or almond flour (you can use any ingredient individually or in any combination) – 120 g
  • Chia seeds, can be replaced with flaxseed – 20 g
  • Flaxseed flour – 50 g
  • Olive / vegetable oil – 30 g
  • Baking soda – 5 g (1 tsp)
  • Salt – 6 g (1 tsp)
  • Cumin – 1/2 tsp (2 g)
  • Sesame seeds or other seeds for decoration – 1 tbsp. l.

Preparation for Cauliflower Buns:

Grind pumpkin seeds together with chia seeds, sift through a sieve, grind the remaining large particles and sift again. In a wide bowl, sift all the dry ingredients used: almond flour, ground seeds and seeds, flaxseed flour, cumin, baking soda, salt. Mix dry ingredients well. In a blender, grind the cauliflower to small crumbs, add 1 tbsp. flaxseed flour and 2 tbsp. oils; beat at high speed for 4-5 minutes. 

 

Pour the whipped mixture into a separate bowl, add the mixture of dry ingredients and knead the dough. Add olive oil and stir it into the dough until it is uniform, collect the dough into a ball. Wet your hands to work with the Dough. Form small bun-shaped circles. Place the formed buns on a baking sheet lined with parchment, brush the surface of each bun with ghee and sprinkle with sesame seeds (other seeds can be used). Bake in an oven preheated to 170C in fan mode for 40 minutes (the baking time depends on the size and shape of the buns being baked).
